This gluten free fish finger sandwich is made in the airfryer. Perfect for a tasty gluten free lunch or dinner.  If you don’t have an airfryer, just cook on a tray in the oven for about 15 minutes at 180C fan (200C conventional/Gas 6).

  • 8 slices Glutafin Gluten Free Select Fresh Seeded Loaf (six for sandwiches, two for breadcrumbs)
    1 chunky white fish fillet, approx 150g
    2 tbs Glutafin Gluten Free Select Multipurpose White Mix
    Good pinch salt and pepper
    1 free range egg, beaten
    4 tbs gluten free mayo
    ½ lemon
    1-2 tsp capers, chopped
    3 or 4 cornichons, finely chopped
    Spray oil
    Few crunchy lettuce leaves

  • Method

    Down
    1. First make some breadcrumbs from the gluten free bread – either by blitzing for a few seconds in a food processor or by rubbing onto a coarse grater – mind your fingers!
    2. Add the flour mix to a bowl and stir in a good pinch of salt and pepper. Cut the fish fillet into chunky strips then toss in the flour mix.
    3. Crack the egg into a shallow bowl with a little more salt and beat with a fork. Tip the breadcrumbs into another shallow bowl.
    4. Take a piece of flour-dusted fish and dip it first into the egg, then into the breadcrumbs, ensuring it’s well coated on all sides.
    5. Place the gluten free fish finger into the airfryer basket and repeat with the rest of the fish. Spray lightly with the oil.
    6. Cook for about 7-8 minutes on a medium heat, or until thoroughly cooked and crispy on the outside. The time will vary depending on your fryer and the thickness of the fish.
    7. While the fish is cooking wash the lettuce and make the tartare sauce. Spoon the mayo into a small bowl and squeeze in a little lemon juice. Stir in the chopped capers and gherkins and cut the lemon into wedges for serving.
    8. Spread a little tartare sauce onto three slices of bread and add a little lettuce then lay the cooked gluten free fish fingers on top. Add another dollop of sauce and the rest of your bread to assemble your gluten free fish finger sandwich.
