A superb centrepiece for a buffet or accompaniment to an Italian pasta dish, accompanied by a delicious rich tomato sauce…buon appetito!

  • Ingredients

  • 500g Glutafin Gluten Free Select Multipurpose Fibre Mix
    10g sachet yeast
    2 tsp golden caster sugar
    100g butter, melted (+ 100g for the garlic butter)
    A drizzle of oil, for greasing
    4 cloves of garlic
    Chopped Parsley

    Sauce

    10g butter
    1 garlic clove, crushed
    1 x 400g can chopped tomatoes
    ½ tbsp balsamic vinegar
    2 tsp golden caster sugar

  • Method

  • 1. Tip the flour mix into a large bowl or the bowl of a freestanding mixer. Add yeast, sugar 1 tsp fine salt. Mix together, then add the melted butter and 275ml warm water. Mix to a dough, then rest for a couple of minutes to allow it to dry out a little. Clean out the bowl, then lightly grease with a little oil. Turn the dough over in the oiled bowl until well coated. Cover with cling film and set aside somewhere warm until the dough has doubled in size.
    2. Line your largest baking sheet with parchment. Tip the dough onto your work surface and knead for 1 minute. Divide into 23 equal balls and lay out to make a Christmas tree shape
    3. Cover the tray with a sheet of oiled cling film and set aside for 60 mins. Heat oven to 200°C/180°C/gas 6.
    4. When the dough is ready, uncover and bake for 20-25 mins until golden brown. Meanwhile, make the garlic butter. Melt the butter in a saucepan, add the garlic and cook for 1-2 mins until the garlic is darker (but not brown). When the bread is cooked, transfer to a platter. Stir most of the parsley into the garlic butter and brush over the bread. Garnish with parsley.

    Melt the butter in a saucepan, add the garlic and sizzle for 30 secs until fragrant. Add the tomatoes, vinegar, sugar and some seasoning. Cook for 30 mins until the sauce is thick.
