A folded omelette sandwich? It was a new one for us too! But this is a tasty gluten free sandwich recipe that you absolutely have to try! Perfect for lazy weekend breakfasts or if you fancy a breakfast dinner!

  • Ingredients

  • 2 slices Glutafin Gluten Free Select Fresh Brown Loaf
    2 large free-range eggs
    Pinch salt and black pepper
    1 spring onion, finely sliced
    1 tsp finely chopped fresh red chilli (optional)
    1 tsp chopped fresh chives or parsley
    Knob of butter
    Large handful grated cheese (such as cheddar or cheddar and mozzarella mix)
    Salad to serve

  • Method

    1. Add the eggs to a bowl with a good pinch of salt and pepper and a splash of water then beat with a fork.
    2. Slice the spring onion and finely chop the chilli and fresh herbs then add to the egg mixture and stir in.
    3. Have all your ingredients ready then heat a large frying pan over low heat and melt the butter.
    4. Pour in the egg mixture, then working quickly, dip in a slice of bread. Turn it over and lay it at one side of the pan. Repeat with the second slice beside the first, leaving a small gap between the slices.
    5. Cook gently for a minute or two until just about set, then using a large spatula, carefully flip the whole thing over.
    6. Immediately add the cheese and fold in the edges of the omelette with the spatula.
    7. Fold one slice of bread over onto the other and leave to cook for a further minute or so on each side. The bread should be golden and crunchy and the cheese will be starting to melt.
    8. Remove with a spatula and cut in half. Serve with a nice crisp salad.
