This week, Sabrina's Chicken Pesto Pasta caught our eye - we just had to ask her to share the recipe!
(Below amounts served 2 adults and 1 child)
1½ Chicken breasts, cubed (I seasoned chicken with paprika, ground black pepper and lemon juice)
1 red pepper
½ bowl mushrooms
A good portion of peas and sweet corn
½ jar Green pesto
Side salad – Rocket, vine plum tomatoes and walnuts
1. Bring a pan of boiling water to the boil and cook the pasta for 14-16 minutes.
2. Next boil the peas and sweetcorn for the recommended time printed on pack.
3. Meanwhile, take a larger pan cook the chicken in a little oil until cooked through. Add pepper and mushrooms and cook for a further 5 minutes. Add pesto and cook until pasta is ready.
4. Drain the pasta and mix well with the pesto, chicken and vegetables and serve with side salad if desired.
Please note that all Glutafin pastas vary in cooking time.
