1 medium sized cauliflower (cut into even florets)
50g butter
450ml milk
150ml vegetable stock from cooking cauliflower
pinch of ground black pepper and sea salt
75g mature cheddar cheese (grated)

1. Steam the prepared cauliflower over a pan of boiling water until just tender. Place in a medium size shallow oven proof dish. Reserve 150ml/1/4pt of the cooking water for the sauce.

2. Prepare the sauce. Melt the butter in a medium size pan and stir in the Flour Mix to make a paste. Gradually stir in the milk and continue stirring until the mixture thickens. Add the reserved vegetable stock, seasonings and three quarters of the cheese. Pour over the cauliflower.

3. Sprinkle with the remaining cheese and oven cook until the sauce is bubbling and starting to brown.

4. Serve as a vegetable accompaniment or for a main meal serve with a crusty Glutafin roll.
