600ml milk
1 each of small onion, carrot, celery stick, bayleaf
½ tsp black peppercorns
50g butter

1. Put the milk in a saucepan with the cut vegetables, bayleaf and peppercorns. Heat gently to simmering point (or put in a large jug and heat in the microwave, medium setting for 3-4 minutes).

2. Remove from the heat, cover and leave to infuse for 1 hour, strain the milk into a jug.

3. Melt the butter in a pan over a low heat, add the Flour Mix, stirring until smooth. Gradually blend in the milk stirring constantly until the sauce comes to a gentle boil. 

4. Season to taste.
