Perfect on their own or inside a pitta!

  • Ingredients

    1. 300g Dried Chickpeas
    2. ¼ tsp bicarbonate of soda
    3. 1 small onion, finely chopped
    4. Handful of parsley, finely chopped
    5. 1 clove of garlic finely chopped
    6. 1 tsp salt
    7. Black pepper
    8. 1 tsp cumin
    9. 1 tsp coriander
    10. 1 tbsp Glutafin Gluten Free Select Multipurpose White Mix

    *This recipe can also be made with the Glutafin Gluten Free Multipurpose White Mix

  • Method

    1. Put the chickpeas in a large bowl, cover with water and add the bicarbonate of soda. Soak overnight for 12-24 hours.
    2. Drain and rinse. Put the chickpeas in a food processor with the onion, garlic, parsley, flour mix, and spices and pulse until a fine meal forms.
    3. Put in a bowl and refrigerate for 1-2 hours.
    4. Form into large walnut size balls or flatten to make patties. Squeeze out any excess moisture.
    5. Fry at 180°C for 4-5 minutes, in three batches, until dark golden and cooked through.
    6. Serve with the hummus and a Greek salad or in the pitta!
