The Spanish eat this as part of any meal occasion, if you are having it for breakfast, you may want to omit the garlic and serve with ham instead for a tasty toasty breakfast alternative!

  • Ingredients

    1. 1 Glutafin Gluten Free Baguette
    2. ½ large beef tomato
    3. 1 clove of garlic
    4. 1 tbsp extra virgin olive oil
    5. Sea salt
    6. 1 tbsp chopped parsley (optional)
  • Method

    1. Bake the baguette in the oven according to the on-pack instructions.
    2. Cut into similar sized portions – 4-6.
    3. Cut the tomato in half and use a box grater to grate all the flesh into a bowl, leaving behind the skin.
    4. Heat a griddle pan and brush the bread with the olive oil. Griddle until nicely marked. (you could just toast the bread and add the olive oil after if you don’t have a griddle pan)
    5. Cut the garlic clove in half and rub all over the griddled surface of the bread.
    6. Spread the tomato flesh over the bread, season and sprinkle with parsley if using.

    (you could even add an extra drizzle of olive oil if desired).
