Gluten Free Marinades and Spice Rubs

Food tastes better when marinated or accompanied by a great tasting sauce.  Why not spice up your BBQ or make the perfect gluten free picnic with this selection of our favourite marinades and rubs?

1. Simple BBQ Spice Rub

Ingredients

2 tbsp sweet paprika

2 tbsp mild paprika

2 tbsp caster sugar

2 tbsp ground cumin

2 tbsp ground coriander

1 tbsp dried chilli flakes

Fresh ground sea salt 

Method

Place ingredients in a bowl; stir to combine and rub into meat before cooking.  Store in an airtight jar in a cool, dark place for up to one month.

 

2. Greek Marinade

Ingredients

6 tbsp olive oil

Juice from one lemon

2 cloves garlic, minced

1 tbsp Dijon mustard

1 tbsp dried oregano

1/2 tbsp chopped fresh or 1/2 tsp dried thyme 

1 tbsp chopped fresh parsley

1/2 tbsp chopped fresh or 1/2 tsp dried rosemary

1/2 tsp ground, black pepper

Method

Mix together all the ingredients in a bowl.  Pour over lamb, beef, poultry or fish and marinate in the fridge for 1-2 hours before cooking.

 

3. Easy BBQ Marinade

Ingredients

2 tbsp cider vinegar,

1 tbsp tomato puree,

1 tbsp gluten free soy sauce

1 tbsp honey

½ clove crushed garlic

1 pinch cayenne pepper

Method

Simply mix ingredients together and pour into a food bag with the meat. Refrigerate for at least an hour before grilling.
