Just wanted to share a pizza base recipe that I developed from the Naan bread recipe on this site.
500g white mix
35ml olive oil
yeast sachet
tspoon sugar
generous teaspoon Xantham gum
About 300ml water

Mix everything together apart from the water
Mix and add the water until you have a nice pliable dough, not overly sticky to the touch, but not too hard either.

Leave to rise for an hour or so.

Split into equal portions. The above will make 5 12\" (30cm) bases.

Dust your rolling surface and then roll really thin (about 2-3 mm). Transfer onto lightly greased silver foil, cover and rest for about 30 minutes before topping and baking on the foil, in the hottest oven you have.
