You can impress the family with your Bolo De Castanhas Do Para (however, secretly to me and you – It’s a Brazil Nut Cake, using our multipurpose white mix).
A signature treat in Brazilian dessert making - It is super simple to make, combining lots of lovely tastes and textures to result in the perfect afternoon pick me up.
250g Multipurpose white mix
1 teaspoon baking powder
1 teaspoon vanilla extract
50g dessicated coconut
1 pinch salt
200g ground Brazil nuts
2 teaspoons cocoa liqueur
Whole Brazil nuts to decorate
2 tablespoon ground Brazil nuts to decorate
Preheat the oven to 180 C
Combine sugar and butter together (mix on a low speed if using an electric whisk)
Once combined, add the eggs one at a time
Finally, add the remaining ingredients (flour, salt, ground Brazil nuts, coconut, baking powder, vanilla extract and cocoa liqueur).
Place the mixture into a greased cake tin and decorate with both ground and whole Brazil nuts.
Bake for 45-60 minutes, until the top is golden
Let it cool for 10 minutes before serving with fruit, ice cream or cream.
