Tasty Cheesey bake Recipe

There are so many delicious flavours when tasting this bake and is a great vegetarian option when cooking
You will need:

Oven temperature: 180'C/350'F/Gas Mark 4
Ingredients
3 Medium Aubergines
Coarse Cooking Salt
1 Large Onion
1 Clove of Garlic
3 Medium Tomatoes
400 grams of canned Tomatoes
1/2 cup of oregano
2 teaspoons of sugar
500g of Spinach
250 g of ricotta Cheese
1 egg beaten
1/2 tsp of ground nutmeg
1 clove of garlic
60g of grated cheese
Cheese Sauce
50g of butter
375ml of Milk
2 tbsp of Glutafin Select Multipurpose white Mix or Glutafin Wheat free Multipurpose white mix
125g of grated Cheese
Method
Method
1. Cut the aubergine into 1cm slices, place on a wire rack, sprinkle with salt, stand for 0 minutes, rinse slices with cold water, drain on absorbent paper
2. Heat Oil in large frying pan, shallow fry aubergine slices until browned on both sides
3. Drain exess Oil from pan, cook Garlic and onion, stirring until onion is soft, add fresh tomato and cook until soft, add tinned tomatoes, oregano and sugar and simmer, until mixture is reduced by half
4. Steam Spinach, until just wilted, drain, then chop coarsely.
5. Combine Spinach, ricotta, egg,nutmeg, and extra garlic in a bowl. Mix well
6. Spread one third of the aubergine over the base of oiled 30cm ovenproof dish, top with tomato mixture, another 1/3 of the aubergine slices, then the spinach mixture
7. Top with remaining aubergines slices and cheese sauce
8. Bake in moderate oven for 30 minutes or until browned
9. Cheese Sauce Melt butter in small saucepan, add white mix, cook stirring until mixture thickens, gradually stir in milk, until sauce boils and thickens. Stir in cheese
