Sweet Waffle Fingers Recipe

Ingredients
1 x 5ml tsp Gluten-free baking powder
Pinch of salt
1 x 5ml tsp Caster sugar
2 Medium eggs (separated)
4 x 15ml tbsp Sunflower oil or light and mild olive oil
125ml/ ¼ pt Semi skimmed milk
1 x 15ml tbsp Oil for greasing
Method
1.Brush electric waffle maker with the oil for greasing. Remember to do this between each batch to prevent mixture sticking. Preheat waffle maker.2.Place Select Mix, baking powder, salt and caster sugar into a medium size bowl. Separate eggs and whisk egg whites until stiff using an electric whisk. Set aside. Add egg yolks, oil and milk to the dried ingredients and beat until smooth. Fold in the whisked egg whites gently using a metal spoon until combined. Spoon the batter onto the heated plates of the waffle maker ensuring you do not overfill. Close lid and cook for 2 – 3 minutes until the mixture is golden and crisp.
3.Ease out of the container, regrease waffle maker using a heat proof silicon pastry brush and repeat until all the batter is used up.
4.Drizzle with maple syrup or try with soft berries or banana, Greek yogurt and honey.
To freeze
Seal in airtight freezer bag. Defrost before serving and reheat for 20 minutes in a medium temperature oven.
Gluten free wheat free option
Use 110g/ 4oz Gluten Free Wheat Free White Mix, 150ml/ 5 fl oz milk and remaining ingredients as shown.
