An alternative solution for lunchboxes. Delicious filled with your favourite cold ingredients, or use for making tasty fajitas!

Ingredients
350g/ 12oz Glutafin Select Multipurpose White Mix*
350ml/ 12fl oz Boiling water
2 x 15ml tbsp Vegetable oil
1 x 5ml tsp Xanthan gum
1/2 x 5ml tsp Salt
1 Sachet yeast (enclosed with Mix)
Method
- Mix 225g/7oz of the White Mix with the boiling water and oil and mix to a paste. Leave for 3 minutes before adding remaining White Mix and all other ingredients. Stir with a wooden spoon and then by hand and bring together to form a sticky ball of dough.
- Knead on a work surface lightly dusted with White Mix. Divide into 5-7 pieces.
- Roll out each piece on a 25cm/10" cut out circle of baking parchment paper. Place one at a time still resting on the baking parchment paper in a heavy based non stick pan. Cook over a gentle heat for 2 minutes until the dough just starts to brown on the underside. Turn over using a spatula, remove paper and cook until the underside also starts to gently brown.
- Continue until all 5-7 wraps are made. Fill as required or wrap and store for up to 3 days.
- Store in an airtight bag. Sprinkle with a little water, wrap loosely in kitchen paper and heat for 10 seconds in the microwave before serving.
* Gluten Free Wheat Free option: 300g/11oz Glutafin Gluten Free Wheat Free Multipurpose White Mix
To freeze: Suitable for home freezing for up to 1 month. Wrap in a freezer bag. Defrost for 1 hour before warming in the microwave as above.
