Nice tasty snack sized treats, which are great for packed lunches.
Oven temperature: 190 C / Gas mark 5
1 Medium sized cooking apple (peeled and cored to give a prepared weight of 125g/4 1/2 oz)
1 x 15ml tbsp Water
250g/9oz Glutafin Gluten Free Select Multipurpose Fibre Mix
2 x 5ml tsp Gluten free baking powder
1 1/2 x 5ml tsp Ground mixed spice
110g/4oz Mixed dried fruit
110g/4oz Demerara sugar
1 Medium size egg
1.Place prepared apple and water in a covered bowl and microwave on full power for 2-3 minutes until the apple has cooked to a puree. Leave for 10 minutes to cool slightly.
2.Rub butter into the Fibre Mix and baking powder until the mixture resembles dried breadcrumbs. Stir in the dried fruit and sugar and then add the egg and apple puree. Bring mixture together into a rough ball and knead lightly on a work surface dusted with extra Fibre Mix.
3.Divide mixture into 12 even sized pieces and shape into rough rounds. Place on a baking sheet lined with baking parchment allowing room for the rock cakes to spread. Place tray in oven.
4.After 10 minutes remove from the oven and ease spread mixture back into a rock cake shape using 2 dessert spoons. Return to the oven for the remaining cooking time.
5.Leave on a baking sheet to cool and go hard before transferring to an airtight container. Eat within 5 days.
