Pizza base - Glutafin gluten free recipes

This gluten free pizza base is much easier to make than a standard flour pizza and the sauce is packed full of flavour. Try simply with cheese and tomato as suggested or experiment with your favourite ingredients!




You will need:



Preparation time:

25 minutes

Oven temperature: 220°C / Gas mark 7
Makes:
1 x 30cm/12" Pizza (to serve 4)



Ingredients

Pizza Base:

250g/9 oz Glutafin Select Multipurpose White Mix
1 ½ x 5ml tsp Yeast
½ x 5ml tsp Salt
½ x 5ml tsp Sugar
2 x 5ml tsp Dried skimmed milk powder
200ml/7 fl oz Hand hot water
1 x 15ml tbsp Olive oil


Vegetable sauce:

½ Medium red onion
½ Medium red pepper
2 Medium tomatoes
1 x 15ml tbsp Olive oil
2 x 5ml tsp Mixed fresh chopped herbs (oregano, basil or thyme)
3 x 15ml tbsp Tomato puree
1 Clove of garlic (crushed)
Pinch of salt and ground black pepper

For the topping...

75g/ 3oz Mozzarella cheese (thinly sliced)
50g/ 2oz Baby plum tomatoes (quartered)





Method

1.Prepare pizza base. Mix dried ingredients together with a fork. Stir in the water and oil to make a smooth thin batter.
2.Spoon batter onto a 30cm/12" round solid base pizza tray lined with baking parchment paper. Brush a 1cm border with a little extra olive oil.
3.Prepare the vegetable sauce. Whizz ingredients together in a food processor to make a thick puree. Spoon onto pizza base leaving the 1cm border clear. Cover with oiled film and leave to prove in a warm place for 45 minutes.
4.Remove film and cook for 20 minutes. Top with the sliced mozzarella and halved tomatoes and cook for a further 5-10 minutes until the cheese has melted and is just starting to brown.


Gluten Free Wheat Free option: Use 200g/7oz Glutafin Gluten Free Wheat Free Multipurpose White Mix

Tip: The pizza base may also be made using Glutafin Select Multipurpose Fibre Mix. Increase water to 225ml/8 fl oz.

To freeze: Suitable for home freezing. Cook for the first 20 minutes as above and remove from the oven. Cool and open freeze in the pizza container before wrapping in a large freezer bag for up to 1 month. No need to defrost. Top with the mozzarella and tomato and cook for 15 minutes in a preheated oven at above temperature.

Have tried this a few times and it is good. Better than the prescription bases (not so hard round the edges) and well worth the effort to make. I have used various toppings and all came out well.
