Oven Roasted Vegetable Pizza Recipe

Ingredients
- 2 Glutafin Pizza Bases (2 per pack)
- 15ml/1 tbsp Olive oil
- ½ Yellow pepper (deseeded and sliced)
- 1 Mushroom (large open cap sliced)
- ½ Courgette (sliced)
- 1 Beef tomato cut into twelve wedges
- 30ml/2 tbsp Fresh basil (chopped)
- 1 Clove of garlic (peeled and crushed)
- 30ml/2 tbsp Passata sieved tomatoes
- 50g/2oz Mozzarella (grated)
- 2 Black olives
Method
1.Place the prepared pepper, mushroom and courgette into an ovenproof dish with the olive oil and roast in a preheated oven for 10 minutes. Add the tomato wedges, basil and garlic and roast for a further 5 minutes.
2.Spread the passata onto the pizza bases. Cover with the oven roasted vegetables. Top with the grated cheese and olive.
3.Place pizzas directly onto a baking sheet and place in oven. Cook for 10–12 minutes until the pizza edge is golden and the cheese has melted.
4.Serve with a mixed green leaf salad.

1.Using a selection of fresh vegetables for added fibre.
2.Using only a small quantity of mono-unsaturated oil which is thought to be better for the heart than saturated fat.
3.Seasoning without the addition of extra salt.
