Gluten free Almond Paste/Marzipan for your luxury Christmas cakes this winter!

Ingredients
Almond Paste_Marzipan
350g/ 12oz Ground Almonds
1lb of icing sugar
110g/ 4oz caster sugar
1 tbsp of rum
2 eggs
½ tsp of almond essence
Glutafin flour mix (for dusting)
Method
1. Mix sugar and almonds together, and blend in beaten eggs, rum and almond essence.
2. Knead together with either extra icing sugar, leave in fridge to harden for 2 hours.
Use as required. When rolling out the marzipan/almond paste use some of Glutafin's flour mix on the area you are rolling as it can become sticky!
