Cream Tea Scones

These gorgeous scones will be great for afternoon tea!

You Will Need

Ingredients

1 Medium cooking apple (peeled, cored and diced to give 125g/4¼ oz prepared fruit)
2 x 15ml tbsp Water
250g/9oz Glutafin Select Multipurpose White Mix
1⁄2 x 5ml tsp Gluten-free baking powder**
25g/1oz Butter (at room temperature)
3 x 15ml tbsp Milk

To Serve:
Clotted cream and jam**

Method

1. Place prepared diced apple into a medium size mixing bowl with the water. Cover and microwave for 3 – 4 minutes until it is cooked to a puree. Set aside to cool. Depending on type of cooking apple you may need to drain off any excess liquid before adding to the scone mixture.

2. To prepare the scones, place half the weighed White Mix into a mixing bowl with the cooled apple and remaining ingredients. Stir to a smooth paste with a fork before working in the remaining White Mix.

3. Transfer raw scone mix to a work surface liberally dusted with White Mix. Knead thoroughly for 2 minutes to give a smooth dough.

4. Roll out the scone dough to a 2.5cm/1” thickness adding more White Mix if necessary to prevent it from sticking.

5. Cut dough into 6 rounds using a 6.5cm/2 ½” round cutter. Place onto a greased baking sheet and bake until well risen and golden brown in colour.

6. Serve warm, split in half and topped with cream and jam.




Important Information

Gluten-free, wheat-free option: Use 225g/8oz Gluten Free Wheat Free White Mix and remaining ingredients as shown.
 



Top Tip

Whilst it may seem strange that the recipe has cooking apples in its ingredients list, this helps the scones stay fresh and moist without affecting their taste.

Make sure you allow sufficient time to cook the apple and cool before preparing the scones. The scones also freeze very well. 

Other flavours: For fruit scones add 50g/2oz mixed dried fruit to the mix. For cheese scones, add 50g/2oz grated mature Cheddar cheese to the mixture.
