Bite Size Mini Pizzas

Gluten Free recipe

Easy to make and can be topped to suit your preference. These gluten free mini pizzas are ideal for a Christmas buffet.

You Will Need

Ingredients

Gluten Free Pizza base:
250g/ 9oz Glutafin Select Gluten Free Multipurpose White Mix
2 x 5ml tsp Yeast
½ x 5ml tsp Salt
½ x 5ml tsp Sugar
2 x 5ml tsp Dried skimmed milk powder
200ml/7fl oz Hand hot water
1 x 15ml tbsp Olive oil

Gluten Free Vegetable Sauce:
½ Medium red onion
½ Medium red pepper
2 Medium tomatoes
1 x 15ml tbsp Olive oil
2 x 5ml tbsp Fresh chopped mixed herbs (basil,
oregano or thyme are all ideal)
3 x 15ml tbsp Tomato puree
1 Clove of garlic (crushed)
Pinch of salt and ground black pepper

Gluten Free Topping:
75g/3oz Mozzarella (finely diced)
50g/2oz Black olives (halfed)
1 Fresh fig (finely sliced into 8 wedges)

Method

1. Prepare the gluten free pizza base. Mix the Glutafin Gluten Free flour mix with the dried ingredients together with a fork. Stir in the water and oil to make a smooth thin batter. Spoon batter into approx. 6cm/2 ¼” rounds onto a baking sheet lined with baking parchment paper. Allow space between rounds to allow mixture to spread a little.

2. Prepare the vegetable sauce. Whizz ingredients together in a food processor to make a thick puree. Spoon onto pizza base leaving a ½ cm border clear. Leave to prove in a warm place 45 minutes.

3. Place gluten free pizza in a pre-heated oven and cook for 15 minutes.

4. Remove from the oven and top with the diced mozzarella, olives or figs. Cook for a further 5-10 minutes until the cheese has melted and is just starting to brown.




Important Information

Gluten Free Wheat Free option: Use 200g/7oz Glutafin Gluten Free Wheat Free Multipurpose White Mix



Top Tip

The gluten free pizza base may also be made using Glutafin Select Gluten Free Multipurpose Fibre Mix. Increase water to 225ml/8fl oz.

To freeze: Follow recipe to the end of stage 3. Allow to cool and top with mozzarella, olives or figs. Open freeze and then wrap in a sealed freezer bag. Freeze up to a month. Cook from frozen. Place in a preheated oven at at 200 ˚C / 400 ˚F and cook for 12-15 minutes until the cheese is bubbling and starting to brown.
